Breakfast Cookies

This recipe is an adaptation of Jennifer Garner’s pretend cooking show. If you haven’t checked out her fun videos on YouTube, you should! Here’s the link to the original recipe: https://youtu.be/E6SQupkN_QM It was early afternoon when I threw these together at which point my husband said, “Breakfast cookies? Alright, cool.” Yes: breakfast, lunch, dinner, or I need a little sweetness cookies. My any time of day cookies…yum! I modified this a bit based on what I had in the pantry. Enjoy!

The changed up version:

1 cup all-purpose flour 1/2 tsp salt

3/4 tsp baking soda 1 1/2 cups old-fashioned oats

1/2 cup wheat flour 1 tsp nutmeg

1/2 cup unsweetened shredded coconut

1 tsp vanilla extract 2/3 cup white sugar

2/3 cup dark brown sugar 2 large eggs

8 Tbsp of unsalted butter (a whole stick @ room temp.)

1/4 cup chocolate chip bits (optional; you could also add cranberries or raisins instead of the chocolate bits)

Directions:

1. Mix the flours, baking soda, salt, oats, and nutmeg in a medium sized mixing bowl.

2. Set the oven to 350 degrees. My oven takes about 15 minutes to heat up, so by the time the dough is ready, the oven should be too.

3. In a separate bowl with an electric mixture on medium speed, cream together the sugars, butter, and vanilla extract. (Quick tip: if your butter is not a room temperature, you can use a cheese grater to grind it down.)

4. Add the two eggs one at a time, making sure each one is blended in nicely while still on medium speed.

5. Change the speed to low while adding the dry ingredients from step one. Add half the dry ingredients and blend it and then the other half.

6. While still on low speed, add in the chocolate bits if desired.

7. Spoon out the dough onto a cookie sheet lined with foil or parchment paper to prevent sticking.

8. Bake for 15-20 minutes until golden brown. The exact time depends upon how your oven cooks. I recommend getting an oven thermometer for precise baking. (Don’t worry, they are pretty cheap.)

9. Pull the cookies out of the oven and let them cool on the sheet for about 10 minutes. Cookies tend to bake a small amount more in the cooling process. Makes about 2 dozen cookies.
